The Saint Philip RX Canne Bleue is made and aged in Barbados, under its warm and humid climate, surrounded by the loving care of our Master Blenders. That's how it develops the aromas that make it perfect for Mojitos, and gives it its unmistakable Barbados flavor.

 

Tasting Notes

Resulting from the juice of one single variety of sugar cane called "Canne Bleue" (blue cane). The Saint Philip RX Canne Bleue is selected for its fine aromatics that offer a balanced mellow harmony of sugar cane syrup and banana, infused with notes of peppermint and citrus.

 

The Saint Philip RX Canne Bleue’s ageing process allows nectar to soak up the surrounding climate, atmosphere, optimism and passion. This is what gives the rum its typical Barbados aromas. Notes of vanilla, caramelized pear, banana and hints of smoked oak will tickle your nose, while smoky chocolate and vanilla notes will rave your palate.

The Saint Philip V.S.O. Select Barrel is one of Barbados’ Very Superior Old rums that proved to the world that rum could be consumed neat.

 

The Saint Philip V.S.O. Select Barrel is the reference for character, body and aroma by which our Master Blenders crafted with a unique blend of rums, matured in selected oak barrels with a particularly heavy toasting, selected by our cellar master. For many rum aficionados, Saint Philip V.S.O. Select Barrel is also the reference by which all rum should be measured.

 

Tasting Notes

Just like a fine wine, it's the taste of the Barbados terroir that stands out. From the world-famous Barbados sugar cane plantation, to the rich and sweet fruits of a Barbados garden to spices and vanilla flavor brought out by long ageing.  You can even taste the raw material used to make the rum - Barbados sugarcane. Coat the sides of the glass with the rum, then shake it off to discard the last drops, leave it to dry and then, after 20 minutes, smell the glass. Only a great rum will leave aromas in a glass for a such a long time.

Saint Philip 12 Years

A rare and limited release of an extra-aged rum

 

Saint Philip 12 years has been distilled from fresh-pressed sugarcane juice. Aged a minimum of 12 years in a combination with virgin and re-charred oak barrels, yielding an exceptional aged rum with unique characteristics of cinnamon and vanilla. The Saint Philip 12 years is a limited edition for passionate connoisseurs who know how to appreciate a rare and luxurious Barbados rum.

 

Tasting Notes

Saint Philip 12 years is produced by repeatedly blending and aging selected rums in old oak casks - mainly double pot distillates that have rounded these crisper notes into a subtler balance. An opulent blend of the finest spirits aged for 12 years that add that delicate touch of tannin. This unique ageing process liberates the aromas and flavors and gives extra smoothness achieving the mark of top quality rum.

 

The nose reveals a long, lingering aroma that is smooth, refreshing and very fruity, that caresses the senses. The palate’s first impression goes from honey to dried plum. The second is of banana, pear, fresh and dried fig, on an incredibly smooth and delicate oak base that masters the delicate accompanying acidity. It exudes finesse that only time can bring and offers a true taste of paradise from the rum that invented rum.

Saint Philip Organic

Saint-Philip Organic Rum is a single-estate rum, craft-distilled in the traditional method of Saint-Philip Barbados. This area is famous for its exceptional cane sugar, the key ingredient in Saint-Philip Organic Rum, crafted from the cream of the crop: organic cane sugar, free from any pesticides or sewage sludge fertilizers. Certified Organic means that the sugar and spices from which Saint-Philip Organic is crafted grew under the tropical sun without a bit of chemical fertilizer or pesticide, chemicals that there is often no real way to extract once applied.

Saint Philip XO

The supreme expression of Barbados rum.

 

The creation of Saint Philip XO has been a unique adventure and personal odyssey of patience and faith but also a cultural journey through Barbados rum making history and tradition. It is handcrafted by blending the finest and oldest rum reserves that have been left to age in Saint Philip cellars with respects to the genuine tradition of Barbados rum-making. This unique and very slow process means that the reserves used are extremely rare and explain why Saint Philip XO is a limited edition.

 

Tasting Notes

The Extra Old vintage adds spice, toffee, and tobacco flavors to the bottle. Our Cellar Master has miraculously married them together to create one of the finest sipping rums in the world. Wonderfully deep, sweet, yet not overly woody, with spicy fruitcake and cassis root and saddle leather. Toffee, honey, mulling spice, vanilla from the oak round out the edges. The finish gets a bit sweeter with notes of demerara sugar and maple preceding a silky-smooth conclusion of dark dried fruit, tarragon, and a fair dose of drying oak. Its woody palate imparts a silky opulence and a cascade of savors accented by dark chocolate, luscious dried fruits and a hint of vanilla. Afterwards, a warm enduring finish persists with irresistible spicy notes.
